Abstract
BB65 represents the result of a study carried out as part of a development project in the field of further education. The study team visited colleges of further education in order to study the changing curriculum and to assess possible physical and financial constraints; they also had discussions with caterers in all sectors of the industry, and examined likely trends in catering technology.
