Abstract
Advises on energy saving measures that can be included in large and small kitchen operations whether new or existing, as well as providing benchmarks in terms of energy cost per meal. Topics addressed include refurbishment and replacement of kitchen equipment, natural resources and kitchen structure, materials, drainage, energy controls, ventilation, refrigeration, layout, cooking appliance selection, installation and commissioning. Not intended as a guide to commercial kitchen design.
